VINIFICATION AND AGING
The grapes are harvested at the end of August 2022 from the Loc. Cascinotta, Podere Cà Preda vineyard, cultivated on silty-clay soils rich in iron typical of the “Terre Rosse Antiche.” Vines, planted in 2012 at 200–215 meters above sea level, are managed using only sulfur and minimal copper if needed, with no fertilizers except green manure. After destemming and crushing, the must macerates on the skins in cement for 11 days, followed by fermentation in cement and aging in steel tanks for 13 months. The wine is left unclarified and unfiltered. Bottling occurred in October 2023, with a total production of 1,100 bottles.
TASTING NOTES
Presents a pale straw-yellow color with a bright, lively appearance. The nose is aromatic and expressive, with notes of white flowers, citrus, and hints of tropical fruit, accompanied by subtle mineral undertones from the soil. On the palate, it is fresh, crisp, and vibrant, with a gentle texture, well-balanced acidity, and a clean, persistent finish.
FOOD PAIRING SUGGESTIONS
Pairs well with light seafood dishes such as shrimp, scallops, and white fish, as well as fresh cheeses, summer salads, vegetable dishes, and mild poultry. Excellent as an aperitif.
